Sigh. Me and strawberries. It’s a never ending love story. Every year when summer approaches I eagerly look for them at my grocer’s on a daily basis. I had to wait so long this year, a late harvest. Every time I entered the shop, a hopeful look upon my face, the grocer would look back, shaking his head – “So sorry Miss, still no strawberries”.
But then, a couple of weeks ago, finally: at least a dozen wee baskets full of tiny red jewels. Strawberry season had begun! I was so excited I may or may not have bought three baskets at once haha. But what to do with such an abundance of strawberries? Don’t get me wrong, I could eat them as they are 24/7, not a problem. Give me strawberries for breakfst, lunch and dinner. But I also like to experiment in the kitchen.
So at this time of the year I use strawberries for everything, from baking to making jam and, my favourite use for them – strawberry smoothies. In this yummy creation I have paired them with another favourite food of mine, the tiger nut.
The tiger nut is a proper little superfood. It’s not actually a nut, as the name migh suggest, but a tiny little tuber. Bein high in fibre and resistant starch, tiger nuts are great for digestion and gut health and they’re also packed with important minerals like magnesium and calcium. Oh, and they taste super yummy in combination with strawberries. Why don’t you give it a try?
Strawberry Tiger Nut Smoothie (vegan, paleo, dairy-free, gluten-free)
- ½ cup courgette, peeled and cooked
- 1 cup strawberries
- 1 small banana
- 1 cup tiger nut milk (or other nut milk)
- 1 tsp ground tiger nuts
- 1 tsp coconut oil
- For an optional protein-boost: 1 tbsp collagen hydrolysate
Combine ingredients in a blender and blend on high for 30 seconds! Serve as it is or with some additional strawberries and maybe some chia seeds.
